Fairfield by Marriott - Chef's Table

I must thank Mr. Vijay Anand Bhakshi, Operations Manager | Fairfield by Marriott , for the surprise element, did I spill the beans, large spacious restaurant with a neat open kitchen. We had to huddle into a surprise to settle in to the kitchen counter at this intimate  10 seat space for a unique dining experience featuring the cuisine of Chef Mahesh!

Fairfield does it exceedingly well under Head Chef P. Mahesh. His India-focussed buffets (there’s also a select à la carte menu) have five extravagant tables—kebabs, curries, accompaniments, salads and desserts

akki roti (Karnataka’s rice speciality), which he served with a divine Udupi kai or vegetable korma. Curry-leaf flavoured mini idlis, the wholesome keerai kootu (greens and lentils cooked with coconut)

 Yes!!! we finally were led to A chef's table  located in  the kitchen of a Fairfield by Marriott restaurant, that we were caught by surprise, as the friendly banter got converted to a fifteen courses..... 

A day to remember in the calender, every year! 20th of October, celebrated International Chefs Day, by members of the World Association of Chefs Societies (WACS) Chefs have the responsibility to lead the way when it comes to the use of ingredients in We have a great responsibility not only to feed, but also to give nourishment,a sensible and responsible manner.

Each guest blogger was served fifteen-plus course. I must admit it has been a well thought out tasting menu, that must have been  finalized days before of Blogger Meet :)

Zaffrani Paneer Tikka

Dish that's going to get you started on any course !!! contains cottage cheese and a rich onion &  cashew nut gravy.In my humble opinion, it could go good Serve it as a main course together with Naan/kulchas/roti'sIngredients that are in right proportion, Paneer,cashew nuts,Raisins, Mint chutney

Subz Shikampuri
captivated Veggies heart &  mind. The result was some really delicious kebabs. The mint leaves, fennel and the flavouring powder made these kebabs very flavourful.
A combination of finely ground vegetables, paneer and khoya, this is a truly echo's with the adage, "Live long King Size!"

Hare Mirchi ka murg malai tikka
The Head Chef Mahesh Head Chef | Fairfield by Marriott ,seemd have got it just right to kewer the marinated chicken pieces & the way the food melts in your mouth, this is their best seller! 

Lamb Seekh kebab
For my fello bloggers who are conouisseur of food & drink, it seemed a terrific appetizer but also make a nice side dish to the main meal. Serve them with green Mint-Coriander Chutney.

Main Course

Paneer Lababdar
Low fat paneer cubes in an aromatic, spicy gravy with sautéed onions,I was enamoured by the softness, though.I am sure going to master the art of making low fat paneer in our  kitchen.

Miloni Trakari
All I recollect is it's a medley of fresh vegetables cooked in a mild spinach gravy,exquisite aubergine curry.

Butter chicken
In my humble opinion,it's popularly called Chicken Makhani is one of the favorite Indian dishes,full flavored dish that complements the chicken well.

Lamb rohan josh
More of succulent lamb stew, we were givrn as frief that this is an aromatic lamb dish of Persian origin, which is one of the signature recipes of Kashmiri cuisine & glad we had this inclusion.

KAVA Dal (signature)
Black lentils simmered overnight with tomato puree and finished with fresh cream & butter

Hyderabadi Vegetable Biryani
An amazingly flavorsome biryani rice recipe, entire team showing off  culinary skills, of chopped vegetables and spices

Hyderabadi Chicken Biryani
The speciality is the brown fried onions & a treat for the rice lovers & great aroma that stand out :)

South Indian Fiest was splendid!

Kori Gassi
A signature dish of the Bunt community in South Kanara district in Karnataka, non-vegetarian delight! we were mesmerised the way authenticity was brought out

Udupi Kai Korma
Well prepared with a great combination of vegetables It was so tasty & yummy.

Akki Roti
rice-pancake: comprising of rice flour, kneaded well to make a soft dough. Signature was disguised we were inmpressed the way the onions, carrots, chopped coriander, cumin seeds and sesame seeds  griddle (tava) or wok and a small amount of the dough is neatly spread over it to resemble a thin pancake (rotti).

We did take a moment to bow for this wonderful feast along with the chef & who created a wonderful experience for us!
